The composite thick surface is sequentially passed through multiple sets (usually 5-6 sets) of rolling rolls with gradually decreasing diameter and increasing speed, and gradually thinned to the desired thickness (usually 0.8-1.2mm).	The formed noodles are passed through a steaming machine (steam tunnel) and heated for a period of time (60-120 seconds) under high-temperature steam (about 90-100 ℃). Starch gelatinization (alphaization), protein denaturation, and the transformation of noodles from raw to cooked.	The dried dough has a high temperature and needs to be naturally cooled to near room temperature by a cooling machine (usually a conveyor belt with a fan) to prevent the generation of moisture after packaging, which can cause spoilage.
Mix flour, water, salt, alkali and other raw materials in proportion into the dough mixer.	The folded dough pieces are deep fried in cooking oil at 140-150 ℃ for a short period of time (about 70-80 seconds) using a deep fryer. Water quickly evaporates and escapes, forming a porous structure in the noodles with excellent rehydration properties.	Bag packaging machine or pillow packaging machine. Automatically complete the bag or cup sealing of dough cakes and material packages.
